Classic margarita

Add to a cocktail shaker:

2 oz light tequila (I like Sauza Blanco)
1 oz lime juice
1/2 to 3/4 oz simple syrup (use 1 oz if you like it sweet)

Shake vigorously with plenty of ice until the outside of the shaker freezes, then strain into a cocktail glass.

I make simple syrup with a 4:3 ratio of sugar:water because I've heard that one teaspoon of dry sugar will have the same sweetness as 1 tsp of 4:3 syrup. This makes it easy to use the syrup in recipes that call for dry sugar.
