Jambalaya

I would have preferred the rice to be just a little drier, so next time I will add more rice, or less broth. Overall, this was still very good!

Simple edamame and rice

Here's a very light, healthful meal that is very quick to prepare: Boiled edamame (frozen from Trader Joe's) and steamed rice.

Chicken dinner

My favorite chicken marinade:

olive oil
lemon juice
soy sauce
minced garlic clove
minced onion or onion powder
thyme
tiny dash of cayenne and/or black pepper

Stab the chicken a few times to let the marinade soak into the meat. Marinate for an hour, then cook on the George Foreman.

Fried rice with cucumber and avocado salad

The rice is actually Trader Joe's chicken fried rice (frozen). Oddly enough, all of the chicken and veggies migrated to the top of the bag, and I ate all of it when I prepared the first half of the bag a couple days ago When I took the remainder out of the freezer, only plain rice was left.

The salad is great. It's just strips of cucumber and avocado with Newman's ginger and sesame dressing.
